Come si fa il seitan Ecco la ricetta del seitan con farina di glutine. E' molto veloce e di sicuro successo! Avendo più tempo a disposizione si può fare anche con farina di grano. Nella sua acqua di cottura si conserva per almeno un settimana, e può essere cucinato in centinaia di modi! Il seitan viene cotto ed insaporito in acqua con salsa di soia (shoyu o tamari), alga kombu, sale. Il frumento contiene quattro proteine, di cui due idrosolubili e due no; una delle due proteine non idrosolubili si chiama glutine. È ideale per un' alimentazione vegetariana o di semplice riduzione di cibi di origine animale, di colesterolo, grassi e calorie. Ha un apporto proteico elevato (18%), contiene pochi grassi (1.5%). Di aspetto simile alla carne, il suo sapore è invece più delicato e la sua consistenza più morbida, anche se spesso quest'ultima varia da un tipo di seitan ad un altro. In commercio è possibile trovare seitan al naturale, oppure alla piastra, a cubetti, affettato come antipasto, affumicato, aromatizzato, usato anche per produrre prodotti simili a würstel con affinità di sapore a quello animale. Il seitan non è tuttavia un alimento completo, possiede infatti una bassa percentuale di alcuni aminoacidi essenziali, è comunque altamente digeribile e quindi adatto a bambini ed anziani; essendo ricavato dal glutine è sconsigliato per chi ha problemi di celiachia o di intolleranza. Le calorie sono intorno alle 120 per 100 gr di prodotto, quindi simili a quelle della carne, senza però i grassi saturi e colesterolo di quest'ultima. Anche il livello proteico è elevato, pur se leggermente inferiore a quello della carne. Il seitan può essere cucinato in tantissimi modi e le preparazioni sono molto simili a quelle della carne, con però il vantaggio di essere molto più veloci, poiché il seitan è un alimento già cotto. Candid camera sull'incoerenza di chi mangia carne: negarsi alla consapevolezza Una candid camera, (probabilmente ideata solo per suscitare ilarità), mostra invece la dicotomia neurologica dell'essere umano e che si manifesta anche quando sceglie di mangiare la carne. Da dove proviene la salsiccia che hai nel piatto? In un supermercato, un attore offre assaggi di salsiccia di maiale, la gente apprezza, ma non appena si accorge che questo assaggio deriva da un maialino che verrebbe tritato vivo in quel momento, reagisce esprimendo disgusto, rabbia, orrore, sputando il cibo che un attimo prima riteneva gustoso, saporito (vedi al minuto 3'45). Addirittura c'è chi si infuria e vuole impedire l'orrore (minuto 4'49), quell'orrore che invece l'altra parte della sua mente consente, addirittura apprezzando quel cibo e 'non percependo' la parte etica che, come è evidente nel filmato, si ribella. E' una dicotomia della mente che appartiene all'uomo da secoli. E tale 'separazione' non riguarda soltanto il mangiar carne, ma pregna tutti i comportamenti di tutti gli esseri umani , nessuno escluso. L'essere umano si trova a convivere ed agire con due parti della sua mente: quella più primitiva, che la scienza definisce 'rettiliana' e quella che invece lo induce a scelte etiche, razionali. Scelte difficili da seguire perché ancor oggi, evidentemente, è maggiormente dominante la prima parte, anche se l'evoluzione dà sempre più spazio, neurologicamente, alla sfera etica. La normalità del mangiar carne nella nostra società è anche dovuta al non saper cosa c'è dietro, ma anche al 'non voler sapere' cosa c'è dietro. E questo chiudere gli occhi, e conseguentemente negarsi alla consapevolezza, è sostenuto allorché prevale la parte più primitiva del cervello. The Journey - Plum Village Plum Village is a Buddhist Monastery that practices the Art of Mindful Living. The village was created Thich Nhat Hanh, a Vietnamese Buddhist monk, a poet, a scholar, and a peace activist. The Village invites visitors to come and practice Mindful Living with the Buddhist Monks and Sisters. There are similar monasteries located in France and is also located in Vietnam and the USA www.plumvillage.org This short film is part of "The Journey" an unique documentary project that delves into environmental, socio-culture and economic issues, with a questioning mind. The focus of the project is to find and film inspiring ideas and projects over a wide spectrum of individuals and cultures, whilst examining our ability to reform our ideals, and our lifestyle in order to make positive changes for our planet and the human race. The Journeymen (a person whom travels in order to gain experience, skills and knowledge) go in search of these stories equipped only with minimal filming gear and personal possessions, they document their experience as they travel to global communities to observe, question and learn. It is an organic process that grows, evolves and takes its own direction. With no planned route nor destination, the journeymen believe they will connect with the right people and places at the right time to film, aid and guide them on. The project is currently filming and traveling through Europe. As the project travels short films are uploaded that can be viewed on this website. It is the long-term goal that this project will travel internationally to create a feature length film that will be released, to be viewed for free. The projects aims to benefit individuals, projects and communities by sharing knowledge, offering solutions and connecting people through film. Undercover Investigation at Hy-Line Hatchery Thrown, dropped, mutilated, and ground-up alive. This is the disturbing reality faced by hundreds of thousands of chicks each day at the world's largest egg-laying breed hatchery Hy-Line International in Spencer, Iowa. New hidden camera footage obtained at this facility during a http://www.MercyForAnimals.org undercover investigation gives a disturbing glimpse into the cruel and industrialized reality of modern hatcheries. The warm, comforting, and protective wings of these newly hatched chicks' mothers have been replaced with massive machines, quickly moving conveyor belts, harsh handling, and distressing noise. These young animals are sorted, discarded, and handled like mere cogs in a machine. For the nearly 150,000 male chicks who hatch every 24 hours at this Hy-Line facility, their lives begin and end the same day. Grabbed by their fragile wings by workers known as "sexers," who separate males from females, these young animals are callously thrown into chutes and hauled away to their deaths. They are destined to die on day one because they cannot produce eggs and do not grow large or fast enough to be raised profitably for meat. Their lives are cut short when they are dropped into a grinding machine tossed around by a spinning auger before being torn to pieces by a high-pressure macerator. Over 21 million male chicks meet their fate this way each year at this facility. For the surviving females, this is the beginning of a life of cruelty and confinement at the hands of the egg industry. Before even leaving the hatchery they will be snapped by their heads into a spinning debeaker a portion of their sensitive beaks removed by a laser. Workers toss and rummage through them before they are placed 100 per crowded box and shipped across the country. The callous disregard for animal welfare at this facility is not isolated. In fact, the conditions documented during this investigation are completely standard and acceptable within the commercial egg industry. Referred to by Hy-Line corporate leaders as mere "genetic products," these chicks are treated just as they are viewed as inanimate objects, rather than the sentient creatures they are. Driven by consumer demand, the egg industry will continue to exploit, abuse, and kill day-old animals as long as doing so remains profitable. Empowered consumers can put their ethics on the table by choosing kindness over cruelty at each meal by adopting an animal-friendly vegan diet. An Injustice for Battery Hens During November and December 2005, a COK investigator was employed at Esbenshade Farms in Mount Joy, Pennsylvania. The video footage was then presented to a state certified humane officer. In January 2006, the officer charged the owner and manager of this egg factory each with a total of 70 counts of criminal animal cruelty.
