Come preparare le alici marinate secondo la Gastronmia Elisa di Orbassano (To). Ecco la ricetta: Preparazione: Pulite le alici in questo modo: schiacciate la testa e strappatela dal corpo. Se l'alice è fresca, verrà via anche la pancia. Aiutatevi con un dito in caso alcune parti restino attaccate. Dopo averle lavate per togliere il sangue rimasto, togliete la spina, passando con il dito sulla pancia per aprirla; troverete subito la spina. Passate con l'unghia su di essa in modo da dividerla dalla carne ed estraetela partendo dalla coda. Procedete con la marinatura delle alici: disponete i filetti di alici in un piatto profondo e sommergetele con aceto di vino bianco. Dopo 2 ore le alici si saranno schiarite; toglietele dall'aceto e tamponatele per togliere l'acido dell'aceto in eccesso e disponetele sul piatto. Condite con un'emulsione di olio, sale ed un goccio di limone e cospargete un pugno di prezzemolo tritato. Consigli: Le alici devono essere fresche perché vanno consumate crude: devono avere la pancia tutta intera, quindi anche se sono del giorno prima hanno la pancia aperta. Idee alternative: L'aceto bianco serve a dare un sapore più dolce: se ne desiderate uno più forte e aspro, utilizzate il succo di limone fresco per la marinatura.

chinese and english recipe/ instructions below: 蛋糕底 材料: 1. 2只鷂蛋 2. 140克糖= 4.9 oz 3. 200克麵粉= 7 oz 4. 1茶匙半發粉 我喜歡食蛋糕有果仁,杏仁碎30克 = 1 oz, 加些糖和奶浸20分 製法: 蛋黃,蛋白分開(蛋白放少許鹽用機打實) 蛋黃加入5湯匙暖奶打起泡,糖分4次加入打至鬆軟,麵粉和發粉先濾過後加入,現在開始 用手拌器拌勻,加入8湯匙礦泉水(要有汽,7up或fanta汽水都可以),加些ru m酒和己浸杏仁碎後再加入打實蛋白,輕力拌勻,看粉籿如太杰,加多些水或奶 28吋圓餅模墊油紙,擦些牛油在底和模邊後,倒入粉料 焗爐180°C= 356° F, 先開5分鐘後才入餅模放中開下一層30分,用竹簽放入中間,如乾淨抽出,就巳焗妥. 取出攤凍 餡: 1. 一杯 250克鮮奶油= 8.45 fl oz用機打實後放雪櫃 2. 二杯 100克醱奶酪流質= 7 oz 3. 130克糖= 4.6 oz 4. 1包半淡渚喱粉=13克, 3 tbsp 加10湯匙水輕手拌勻等20分後煮沸 5. 10個士多啤利壓茸加些糖 以上2至5混合後放雪櫃 50分後取出,加入1 用手拌器拌勻 做: 蛋糕薄切三層放環放入第一層蛋糕倒入餡一半,放第二層蛋糕把餘卞一半全倒入,第三層放 面,重放雪櫃到明天 一杯 250克鮮奶油加入二茶匙雲呢拿糖用機打實後放雪櫃 燒紅pan將70克杏仁條及二湯匙糖傾入炒至起膠,慢慢洒入少許清水炒,用筷子棑開杏 仁條,放油紙攤凍,用木棍將杏仁糖輾碎. 從雪櫃取出蛋糕拿出環,塗上巳打實鮮奶油在蛋糕四週,放上士多啤,杏仁糖碎洒在餅圈和 餅面上 strawberry cake ingredients: 1. 2 eggs 2. 140 gram sugar, 4.9 oz 3. 200 gram flour ( sieved flour)= 7 oz 4. 1 1/2 tsp baking powder I like eat cake with some nuts, chop almond 30 gram = 1 oz, add some sugar and milk for 20 minutes before use method: separate egg yolks from egg white. beat egg white add some salt till stiff beat egg yolk and 5 tbsp warm milk, add sugar time to time in till creamy, slowly pour in flour and baking powder into dough mix together add 8 tbsp carbonated water ( also can use 7 up or fanta ) rum and the chopped almond in pour egg white in mix well, check the dough if too sticky add some water or milk. method: 28 inch round baking tin, put baking paper on and a little butter to grease the tin, pour dough in . oven on 180°C= 356° F, before baking heat oven for 10 minutes (my oven has 5 different stages mosty when I bake I use the second from bottom) bake till brown about 30 minutes, leave to cool. filling: 1. 250 gram fresh cream= 8.45 fl oz (beated up put in fridge) 2. 200 gram yoghurt= 7 oz 3. 130 gram sugar= 4.6 oz 4. 13 gram= 3 tbsp white gelatine powder, (add 10 soup spoons water mix well and stay for 20 minutes ) boil it. 5. 10 strawberry mashed add some sugar method: 2-5 mix together put in fridge for 50 minutes then add the fresh cream from the fridge mix well . to make the strawberry cake: cake sliced into 3 pieces put cake rack pour in set mixture. return to fridge for over night. on next day: 1. take out the cake rack 2. decorate with fresh cream and strawberries. 3. almond with sugar stir fry in hot pan till sugar becomes caramel, gradually sprinkle in water, stir well and spread onto a sheet of baking paper, leave to cool,and crush almond with rolling pin into fine crumbs, sprinkle almond crumbs all over

To complete this How-To you will need: A crusty hoagie bun Sliced cheeses Sliced cold cuts Thinly sliced cucumber Thinly sliced tomato Mayonnaise or sandwich dressing Romaine lettuce Sprouts Bacon An olive A frilly toothpick Fresh herbs (optional) Salsa (optional) Guacamole (optional) Step 1: Slice bun Slice the bun lengthwise. Dig a trench through the center of both halves with your fingers. Step 2: Pile on meats and cheeses Fill the trenches with your choice of fresh meats and cheeses to form a protective moisture barrier to the bread. Step 3: Add cucumber and tomato Add the cucumber and tomato slices to balance the salty bite of the meat and cheese. Tip: Pack your ingredients separately and construct your sandwich on site if you take your lunch to work or school. This preserves freshness and protects against soggy bread. Step 4: Drizzle mayo or dressing Drizzle on the mayo or dressing of your choice. Be gentle -- you don't want to turn your sandwich into an oily mess. Ricette di pesce: Insalata di polpo_uChef.it

Alcune utili informazioni su come cuocere e preparare il polpo per l'insalata,a cura della Gastronomia Elisa di Orbassano. Ecco la ricetta: Preparazione: Inserite il polpo nell'acqua bollente con sale e alloro per circa 45 minuti, se più piccolo di 2,5 Kg anche meno. Dopo la cottura lasciate raffreddare il polpo nell'acqua per almeno mezz'ora ma meglio sarebbero due o tre ore per farlo intenerire di più. Ponetelo su un piatto e cominciate a tagliarlo. Potete servirlo così oppure, visto che la pelle può avere un sapore forte, è possibile eliminarla con l'aiuto del coltello. Tagliate a pezzetti sottili e condite con olio d'oliva, succo di limone e sale; le quantità sono a vostro piacimento, ma ricordate di usare le stesse per olio e limone, in modo da farle emulsionare meglio. Decorate con prezzemolo tritato e siete pronti per servirlo Consigli: Il polpo, fresco, va prima congelato poi scongelato, in modo da essere più morbido. Per verificare la cottura, osservate i tentacolini. Se si staccano, il polpo è stato cotto troppo. Idee alternative: Invece di mettere il limone, potete aggiungere dell'aceto all'acqua bollente.
